Amazing Fish Pie

Serves 4

In a pan, gently cook 1 diced onion with 1 small diced carrot and 1/2 a diced celery stick with a pinch of dried chilli flakes in a little oil for about 10 minutes. Add 1 1/2 pints of double cream, a good handful of grated British cheddar, season with salt, pepper and a good grating of nutmeg. Simmer for 5 minutes, stirring occasionally. Place 1kg of mixed fish (cod, salmon, prawns, smoked haddock) into an oven proof dish, pour over your cream mixture and sprinkle over some frozen green peas and a handful of fresh spinach leaves. Leaving the skins on, cut and quarter enough potatoes to cover the fish. Boil them until tender, drain and toss in oil and season with salt and pepper (imagine you are making roast potatoes) place the potatoes evenly on top of the fish and roast in the oven at 185c for 40-50 mins or until the potatoes are crispy...
