Crispy Lemon Battered Haddock with Homemade Tartare Sauce

Serves 2

TCG Tartare Sauce - Add 4 tablespoons of mayonnaise to a bowl, add 1 tablespoon of chopped capers, 1 tablespoon of chopped gherkin, 1 teaspoon of fresh chopped parsley, a little lemon zest, season with sea salt and black pepper.
Two Keys Lemon Batter - In a bowl, mix together 60g of plain flour, 40g of semolina, 1 teaspoon of baking powder, season with a little sea salt and ground black pepper. Now add 25ml of Vodka, 1 teaspoon of runny honey, and slowly stir in 150ml of Two Keys Lemon Mixer or enough to get a good batter consistency like that of double cream. Place in the fridge until your ready to fry the fish. Preheat your oil in a deep fat fryer with a basket to 375F (I use Cotswold Gold rapeseed oil) Dust 2 fresh Haddock fillets with seasoned flour, then coat the fish in your batter and slowly lower into the hot oil, doing so away from your body. Now for a crucial part - Lift the fish to the surface of the oil with the basket, and using a spoon drizzle more batter over the top of the fish. This technique gives you the most amazing jagged crispy edges when the batter is cooked. Cook for 7-8 minutes or until the batter is golden and crispy and the fish is cooked through. Serve with homemade tartare sauce, a wedge of lemon and homemade chips. Enjoy!
